This Chunky Onion and Tomato Relish is a perfect accompaniment to our signature Boerewors. The rich, caramelized onions and tomatoes complement the savoury goodness of the Boerewors, creating a delightful flavour harmony.
Ingredients:
- 2 Tins of Diced Italian Tomatoes (Alternatively, 8 fresh diced tomatoes)
- 2 Onions, roughly chopped
- Salt & Pepper, to taste
- 2 tbsp Mrs Balls Chutney
- 1 tbsp Sugar (for caramelization)
- 2 tbsp Balsamic Vinegar
- 1 tbsp Worcestershire Sauce
- 2 tablespoons Olive Oil
Instructions:
1. Caramelizing the Onions:
- Heat 2 tablespoons of olive oil in a frying pan over medium heat.
- Add the roughly chopped onions and sauté until they become soft and caramelized.
2. Preparing the Relish:
- Once the onions are caramelized, add the diced tomatoes to the pan.
- Sprinkle sugar over the mixture to aid in the caramelization process.
- Pour in the balsamic vinegar and Worcestershire sauce for depth of flavour.
3. Seasoning:
- Season the mixture with salt and pepper according to your taste preferences.
4. Adding Mrs Balls Chutney:
- Stir in 2 tablespoons of Mrs Balls Chutney. Adjust the quantity based on your desired level of sweetness and tanginess.
5. Simmering:
- Allow the mixture to simmer for approximately 10 minutes, stirring occasionally. This helps the flavours meld together and intensify.
6. Adjusting Consistency:
- If you find the relish too thick, you can add a splash of water to achieve your preferred consistency.
7. Cooling and Storing:
- Once the relish reaches the desired consistency, remove it from heat and let it cool.
